Broccoli & Halloumi Fritters
Makes 8 large fritters
- 1 small broccoli head and stem, steamed until soft
- 2 small zucchinis, grated
- 1 can of corn kernels, drained
- 1 cup grated halloumi
- 6 eggs, beaten
- ¾ cup - 1 cup of self raising flour
- Salt and pepper to taste
Chop steamed broccoli roughly into 1cm size pieces.
Squeeze as much liquid out of the grated zucchini as possible.
Add broccoli, zucchini, corn, grated halloumi, salt and pepper and eggs to a large mixing bowl, mix well.
Add ¾ cup self raising flour and stir into the mixture. Keep adding more as needed until the consistency of the fritters is quite thick, you should be able to scoop up the mixture in a spoon and it not be runny.
Heat a small amount of olive oil in a non stick frying pan over low to medium heat. Add ⅛ of the mixture to the pan and cook slowly on one side until cooked almost all the way through before flipping and finishing the cooking on the other side.
Add oil as needed and repeat until all the mixture is done, feel free to make smaller sized fritters if that suits you better.
NOTES
*Serve with smashed avo, eggs, fried mushrooms and tomato with a tomato chutney for a cafe quality meal.
*You could also add other grated veggies like carrot or swap out broccoli for cauliflower, get creative and use up what you have in the fridge 🙂
