Cauliflower & Quinoa Slice
- ½ cup cooked quinoa, cooled
- 1 cup frozen cauliflower rice (bought or home made)
- ½ cup frozen peas thawed
- 2 eggs
- ¼ cup parmesan cheese
- ½ cup grated cheese
- ½ tsp vegetable stock powder (I use vegeta)
Preheat oven to 180C. Line a loaf tin with baking paper.
Cook quinoa and cauliflower rice as per packet instructions, allow to cool.
Combine all ingredients and a mixing bowl and mix well.
Press mixture into the bottom of the loaf tin and cook for 15 - 20 mins, or until cooked and golden brown.
Allow to cool a little before taking it out of the tin. Allow to cool before slicing into 8 slices.
TIP - I like to cook up a cup of quinoa at the beginning of the week to use for other meals during the week. It makes a great low carb alternative to rice and makes a high protein breakfast when mixed with yoghurt and nuts.
