Delicious Homemade Herb Pesto
You will never want store bought pesto again!
- 1 bunch fresh basil
- 1 bunch fresh coriander
- 10 fresh mint leaves
- 1 cup raw cashews (soaked for 2 hours)
- 1/3 cup grated parmesan cheese (or nutritional yeast)
- 1 tbsp miso paste (optional)
- Juice of 1 lemon
- 1/3 - ½ cup olive oil
- Salt & pepper to taste
Variations
- For vegetarian option replace nutritional yeast with parmesan cheese
- For a ‘Nut Free’ version replace cashews with sunflower seeds
- Replace coriander and mint for 2 big handfuls of spinach leaves
- Replace cashews for walnuts and add a pinch of chilli flakes to super charge your pesto
Place all ingredients in to a food processor and blitz until you reach your desired consistency (I like mine a little bit chunky).
Play around with the ingredients until you find your own favourite combo.
Serve with your favourite salad, on bruschetta, as a pizza base, stir through pasta, with scrambled eggs… SOOOO GOOD!!!
