Healthy Raspberry Oat And Applesauce Muffins

This raspberry oat and applesauce muffin recipe using healthy ingredients will satisfy your sweet tooth and give you the energy you need to crush your workouts and your day.
- 1 cup rolled oats
- 1 cup apple sauce
- 3/4 cup flour
- 1/2 cup almond milk (or milk of choice)
- 1/3 cup coconut sugar (brown sugar can be used as an alternative)
- 1/4 cup coconut oil, melted
- 1 tsp vanilla essence
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 large egg
- 1/4 cup fresh or frozen raspberries, halved
Preheat your oven to 180ºC. Line a 12-cup muffin tin with muffin cups.
In a medium bowl, stir together the rolled oats, applesauce, milk, egg, vanilla, coconut oil and sugar.
Next, in a large bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt. Pour in the applesauce mixture and stir, then mix in the raspberries until just combined.
Spoon the batter into the muffin cups, then bake for 18 - 20 minutes or until a toothpick inserted in the centre comes out clean. Don’t over bake or the muffins will be dry.
Remove the muffins and let cool completely. Store in the fridge or the freezer. ENJOY!
